Sesame Noodle Salad with Hot Peanuts Serves 4 Ingredients: 12 oz egg noodles 2 Carrots, peeles and cut into fine julienne strips 1/2 cucumber, peeled and cut into1/2 in cubes 4oz celeriac, peeled and cut into fine julienne strips 6 scallions, finely sliced 8 canned water chestnuts, drained and finely sliced 6 oz beansprouts 1 small fresh green chili, seeded and finely chopped 2 tbsp sesame seeds, to serve 1 cup peanuts, to serve For the Dressing
1 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp honey
1 tbsp rice wine or dry sherry
1 tbsp sesame oil
Preheat the oven to 400 degrees F. Cook the egg noodles in boiling water, following the instructions on the side of the package. Drain the noodles, refresh in cold water, then drain again. Mix the noodles with all of the prepared vegetables. Combine the dressing ingredients in a small bowl, then toss into the noodle and vegetablemixture. Divide the salad between 4 plates. Place the sesame seeds and peanuts on seperate cookie sheets and place in the oven. Take the sesame seeds out after 5 minutes and continue to cook the peanuts for futher 5 minutes until evenly browned. Sprinkle the sesame seeds and peanuts evenly over each portion and serve at once
