Coffee Sponge Drops Makes 12 Ingredients: 1/2 cup all purpose flour 1 tbsp instant coffee powder 2 large eggs 6 tbsp superfine sugar For the Filling 1/2 cup nonfat cream cheese 1/4 cup chopped stem ginger Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper. Make the filling by beating together the cheese and ginger. Refrigerate until ready to use. Sift the flour and instant coffee powder together.
Combine the eggs and superfine sugar in a bowl. Beat with a hand-held electric mixer until thick and like a mousse ( when the mixer is lifted, a trail should remain on the surface of the mixture for at least 15 seconds).
Gently fold in the sifted flour and coffee mixture with a metal spoon, taking care not to knock out any air.
Spoon the mixtures into pastry bag fitted with a 1/2 in. plain tip. Pipe 1 1/2 in. rounds onto the baking sheets. Bake for 12 minutes. Cool on wire rack, then sandwich together with the filling.
