This is a simple, healthy Indian dish. Eat it with rice, bread etc.
Serves 4 - 6 (quite filling) Ingredients: 4 tablespoon vegetable oil half teaspoon of whole cumin seeds 4 cloves garlic peeled & finely chopped 75 g (3oz) onions chopped 200g (7oz) whole green lentils washed & drained 720ml (1 1/4 pints) water half teaspoon salt 1/8 - 1/4 tsp cayenne pepper
1. Heat oil in a heavy pot over medium flame 2. When hot put in cumin seeds 3. A few seconds later add garlic (take care, it sticks to the pan and it browns very quickly so you have to keep stirring it to keep it from sticking 4. When garlic is medium brown add onions. Stir & fry til onions begin to turn brown at the edges 5. Take pan off heat and add lentils & water. Put pan back on heat and bring to boil 6. Cover turn heat to low. and simmer (about one hour or until lentils are tender.)
BE CAREFUL You need to watch it carefully as sometimes the water dries up and the lentils burn. If the water is getting low and the lentils aren't cooked yet, keep adding a little water.
When the lentils are soft the dish should not be dry. It is better to have it a bit more on the wet side than on the dry side. The lentils will absorb the water after you turn off the heat.
6. Add salt and cayenne and stir them in.
NOTE: cayenne is optional. If you don't like it, don't add it.
It's ready to eat!!
