This may be mundane to some of you, but I like it. Is it good for your health? I have no idea. Maybe so.
Ingredients: (for about 4 servings (not monstrous ones!))
Eggplant enough for 4 people diced
medium sized onion. Reasonably thinly sliced.
green pepper chopped pretty fine.
one or two cloves of garlic crushed
potato enough for 4. diced
4 eggs
freshly ground black pepper and sea salt.
extra virgin olive oil
How do you do it?
1. heat up a couple of tablespoons of oil in a frying pan (non stick helps a bundle)
When it's hot add the onion and garlic, but don't overdo the heat or else you'll burn it and it will not smell good at all.
Black pepper freaks can grind a bit of black paper into this while it is frying.
It smells good.
2. When the onions seem a little softer, add potatoes, and cook it all on a reasonably low heat.
3. When It looks as though they are all getting softer add all the other vegetables.
Here add your teaspoon of oregano too and cover the pan.. Cook all on a low heat.
4. While it is cooking, beat up your eggs in a big bowl. I usually add salt and white pepper here. The more you beat the eggs the lighter the omelet is.
5. Presuming all your vegetables are cooked, turn off the heat and spoon everything into the same bowl as the eggs.
Mix it all around so it's thoroughly coated.
Clean your frying pan
and coat it with more oil (not too much) heat it up til its hot enough,
6. Now empty all the mixture from your bowl into the frying pan. Best to have the heat on high here at first and then turn it low.
Put a lid on the pan and cook it at a low heat until you think the mixture has solidified reasonably. There should definitely not be a lot of excess liquid at this stage.
7.Now the omelet needs to be turned over. This is tricky sometimes. I usually put a large plate completely covering the top of the frying pan and then turn the pan over.
If your wrist is not strong please use an alternative method.
Once you have tuirned the omelet over cook it for another ten to fifteen minutes (not too hot). Then It should be ready. Use your judgement to guess when it is OK.
8. Turn it out on to a plate.

Eat it with crispy delicious French bread or any other delicious bread you like and salad.
or come to think of it eat it with whatever you feel like eating it with. This is very nice.
Disclaimer: If you suddenly start changing into strange furry creatures while eating this, complain about GM crops!
