1 pkg sugar-free lime Jello 1 cup boiling water 8 oz cream cheese (softened) 1/2 cup Splenda 4 tbsps lemon juice 1 tsp lemon zest (finely grated) 1/2 cup sour cream Dissolve Jello in boiling water. Cool in fridge (or freezer) until slightly thickened, and is throughly cooled. Beat together cream cheese, Splenda and lemon juice until smooth, stir in the lemon zest. Add the well cooled Jell-0 and sour cream, beat well. Spoon into serving dishes. Chill until set (minimum 4 hours). Garnish with fresh mint and a couple of cranberries.
