Citrus Couscous with Chicken Mint & Almonds 2 cups orange juice 1/2 tsp salt 1 pkg couscous (10 ounces) 1 onion - finely diced 1 tbsp + 1 tsp extra virgin olive oil 10 oz chicken breast, roasted pcs 1/3 cup fresh mint, chopped 1/2 cup almonds, toasted In a medium sized saucepan bring orange juice, salt and 1 tbsp of oil to a boil.
Remove from heat and stir in the couscous. Cover and let stand for 5 minutes. Fluff with fork.
In a small skillet sauté onion in remaining oil and stir into the (fork fluffed) couscous.
Stir in the roasted chicken pieces, mint and almonds.
Makes 6 servings
