Powerful Peanut Soup 1 tsp olive oil 1 cup onion, chopped 1 tsp cumin, ground 1 lb sweet potato, in chunks 1 lg green apple, in chunks 1 can chicken broth (10 oz) 3/4 cup apple juice 1/8 tsp cinnamon 1/2 cup peanut butter, creamy salt/pepper to taste Garnish - sour cream, chopped peanuts, chives and thin apple slices, as desired.
Heat oil in a large pot over medium heat. Add the onion and cumin. Cook stirring until the onion is transparent. Add the sweet potato, apple, chicken broth, apple juice, cinnamon and the salt/pepper.
Cover and bring to a boil. Reduce heat and simmer until the sweet potato and apples are tender, about 20 minutes.
Add the peanut butter and stir in until melted. Purée in food processor or blender until smooth (best done in batches). Return to pot and heat through.
To serve, ladle into bowls and garnish as desired. I usually just put the garnishes on the table, and people pick as they wish.

This soup is an excellent source of folate, protein, copper, phosphorus, magnesium, niacin and thiamin.
