1. mix ur cake mix and add bout 1 tblsp of mint extract. prepare ur pans.. u will need two round cake pans.. put half the cake mix in each pan
2. u will need to take half a bag of chocolate chips out and divide sprinkling into the two pans.. bake @ 350* till toothpick comes out clean.
3. while that is baking get ur grater out... take one half of the dark baker's chocolate and grate that.. set to the side do the same w/ the milk chocolate bar cut up half of the package of andies mints set all this to the side u will need it laters
4. set to warm on the stove the heavy cream .. now this is where u gotta watch.. dont scald the cream.. slowly after it has warmed add one tsp mint extract then begin to add the whole bag of chocolate chips to the cream.. stiring constantly till creamy.. then add half the bag of remaining chips to it..add one half of the package of swoops to the mix as well... this will make it pretty thick once it is chilled.. u will want the icing to chill but not be cold .. it will be thick to spread or a very thick pour... if it isnt thick enough after chilling for a few.. slowly heat it up and add more chocolate..
5. in a double boiler.. or micro if your brave... melt the rest of the dark chocolate bakers chocolate..
ok once ur cake is done... allow to cool..
put on a layer of frosting on the bottom layer... then sprinkle some of the grated chocolate in the middle.
top w/ the top layer.. and frost the cake
now here is where u get decorative..
sprinkle bout 3/4 of the remaining grated chocolate on the top and add the chopped andies mints..
use the remaining swoops for garnish as well as the unchopped andies
remember to keep some of the chocolate and chopped mints to add laters to the dish over the cake when u serve it...
next drizzle the melted chocolate over the top of the cake for a finish.. keep some to drizzle when u serve it..
that is death by mint chocolate cake ..
enjoy! ;D
