Carrot Raisin Bread
From the kitchen of Grooming Goddess
3eggs 2 tsp baking soda
1 1/2c vegi oil 1 tsp baking powder
2c shredded carrots
1 1/2 c sugar 1 tsp ground cinnamon
2 tbsp grated orange peel 1 tsp ground cloves
1 tsp vanilla 2/3c chopped nuts
3 1/3c flour 2/3c raisins
Preheat to 350 degrees Fahrenheit
Grease bottom of bread pans only!
Beat together: eggs, carrots, oil, sugar, orange peel and vanilla. Add in: Flour, Baking Soda, Baking Powder, Cinnamon & Cloves. Beat until moist. Stir in Raisins and nuts.
Divide into 2 Bread Pans.
Bake at 350 for 55-60 minutes
Is done when wooden tooth pick is inserted in center and comes out clean.
Cool 10 minutes before removing from pan.
Cool completely before slicing.
Apple Raisin Bread Alteration:
Substitute 2 cups chopped (Un pared) apples for carrots
omit orange peel
